In ArcGIS Pro, when I export joined data to a shapefile, all the column headings get renamed to generic headings. With ArcGIS Desktop, the column headings for the feature class and the joined table are preserved.

Both screenshots that you sent appear to be from ArcGIS Pro so I'm a bit lost as to the comparison.

What format is your starting shape data in? (file geodatabase feature class, enterprise gdb, etc.)
What is the format of the data in the joined table? (file gdb, dbf, csv, Excel)
I think we need to start with that first as I'm not seeing an issue with some quick testing on my side.
