Set the possibility
to turn off labels "High:/Low:"
in the legend for stretched values along a color ramp in the ArcMap.

You can edit those labels, and even make them blank if you like. Go into the Properties dialog for the layer, to the Symbology tab. Or just single click twice on the label in the TOC to put it into edit mode like you can with other text in the TOC.
